Vegetable Tortilla Soup

I just recently released Vegetable Tortilla soup, and wanted to tell you about the benefits of this particular soup.

Many people don't realize that a soup offers all of your proteins, carbs, and fat in a single meal! Soups are an extremely easy way to get a complex meal without the hassle of having to cook a main dish accompanied by different sides. 

So let's dive into this delicious soup! Oh, and did I mention it's vegan, which means it can be enjoyed by everyone? 

Benefits: 

Black Beans:

-Filled with iron, calcium, magnesium, and copper, black beans contribute to building and maintaining healthy bones. 

-Black beans contain a large amount of fiber, potassium, folate, Vitamin B6, and much more which helps lower the amount of cholesterol in your blood and reduce the risk of heart disease. 

-They are a wonderful mix of proteins and carbs, which means they're wonderful for maintaining a healthy weight! 

Corn:

-Contains essential minerals such as zinc, magnesium, copper, and iron.

-Corn is also known for it’s antioxidants carotenoids, lutein, and zeaxanthin, which promotes eye health.

Onions:

-Onions are particularly high in Vitamin C, which regulates immune health, collagen production, tissue repair, and iron absorption.

-They also have amazing anti-inflammatory properties that help reduce high blood pressure and prevent blood clots!

-According to Healthline, “A study in 54 women with polycystic ovarian syndrome (PCOS) found that consuming large amounts of raw red onions (40–50 grams/day if overweight and 50–60 grams/day if obese) for eight weeks reduced total and “bad” LDL cholesterol compared to a control group.”

 -And did you know that onions contain cancer-fighting compounds? Because of the sulfur compounds and flavonoid antioxidants found in onions, they can help fight and prevent cancer.

Vegetable Broth:

-Vegetable broth is low in calories and carbs, which makes it a great way to maintain a healthy lifestyle!

-It’s rich in fiber, vitamins, and minerals. It also helps you flush out harmful toxins and wastes from your body.

-It keeps you full, which can promote weight loss! It also aids you in getting your daily water intake in.

Cilantro:

-Cilantro is extremely rich in phytonutrients, flavonoids, and phenolic compounds. It contains Vitamin A, Vitamin K, Folate, and Potassium.

-Cilantro also contains dodecanal, which is an antimicrobial compound that protects your body against infections and illnesses.

 -It can also aid in brain health, blood sugar management, and helps reduce anxiety.

As you can see, this soup is packed with everything you could need in order to maintain a healthy mind, body, and soul!
